We try to eat at least one meatless meal a week, and I’m even going for two and sometimes three meatless meals per week now, or at least trying to cut back on the amount of meat that I use. The Everything Beans Book came at just the right time to help with that!
More than just recipes, this book has complete information about why beans are a nutritious and important part of a healthy diet, as well as detailed instructions on soaking and cooking dried beans and then using them in recipes.

I have always used beans as a staple for our meatless meals, but it’s usually just some version of beans and rice. Right now I have Southwestern Beans in the crock pot for dinner. But, the thing that I like the best about The Everything Beans Book is that it goes way beyond recipes for traditional beans and rice.

We recently had the Pasta With White Bean Sauce (scroll down for a link to a free download!) for dinner. It was really yummy, and surprisingly, you almost couldn’t tell that there were beans in it! Even my bean hating daughter ate it right up – I told her it was like white mac & cheese (which is pretty much true!)
I also followed some of Katie’s advice in this book to try stretching meals with ground beef by adding cooked lentils. I made sloppy joes and included lentils in about a 1:1 ratio with the meat. Even though at first my hubs was a bit concerned and asked, “What are these little round things?” He and I both agreed that adding lentils was definitely an acceptable way to stretch the meat – the sloppy joes still tasted great!
