I hope everyone had a great weekend! We enjoyed some time with my family in Michigan – two weekends in a row with the fam! Meal planning is not coming easily to me right now, but it’s still important for me to stick with it, even when I don’t feel like it, because having no meal plan at all is not a fun position to be in at the beginning of the week.
Here’s this week’s menu:
Monday – Roasted Whole Chicken, mashed potatoes and creamed asparagus
Tuesday – dinner with our small group
Wednesday – Homemade Vegetable Beef Soup (with leftover roast beef and au jus from French Dip sandwiches last week), Buttery Bread Machine Rolls
Thursday – Thai Lettuce Wraps
Friday – Homemade Pizza
Saturday – Hamburgers on the Grill, baked french fries
Sunday – Grilled Chicken topped with bruschetta and cheese, rice and veggies (from last week)
I also need to make some snacks and stuff for Jer to take in his lunch this week.
Black Bean Hummus
Berry Oatmeal Muffins
Granola Bars
