I love the fall. There are lots of important days for our family, birthdays and our anniversary, but I also just love the changing of the trees, the cooling of the weather, and the activities like apple picking, football and soccer games, and baking, after a hot summer.
I’ve also been a little lax with meal planning lately, so I’m glad to get back into it and work on getting back to cooking from scratch and planning snacks to have on hand. I’ll list the things I’m planning to make this week after the weekly menu.
Here’s this week’s menu:
Meatless Monday – Crockpot SW Beans with rice
Tuesday – dinner with our home group, making bread in the bread machine
Wednesday – Meatloaf, baked potatoes and salad
Thursday – Breakfast for dinner, eggs, fried potatoes, venison sausage (a little nervous about this, but got it from a friend, so I want to try it and see how it is.)
Friday – Garlic Herb Pasta, with spaghetti squash in place of the pasta (this will be my first time trying this, interested to see how it goes over with the fam!)
Saturday – Tacos with Homemade Tortillas & Mexican Rice
Sunday – Beef Roast in the crockpot with mashed potatoes and corn
And on my things to make list – we’ll see how much I actually get made:
- Granola/Granola Bars
- Power Bars from Healthy Snacks to Go
- Hummus
- Zucchini Muffins (hope to share this recipe with you soon!)
- Pumpkin Muffins
