Wow! How is it November already? The saying, “The days are long, but the years are short,” has been on my mind a lot lately! I feel like the weeks and months are flying by, and yet there are days I feel like will never end!
I so badly just want to grab onto the sweet, simple moments with my babes and keep them like that forever! Those are the things I hope I remember years from now, and not the crazy, overwhelming, pull out my hair moments, when I think – what the heck am I doing?!
And, this season in my life is about to get just a little bit busier. I’m starting a small part-time job this week with Young Life, an organization that I used to work for, and I love their mission to reach teens and young adults with the message of hope found in Jesus Christ. I’m working in the office for a few hours a few days a week, which really isn’t much, but it will definitely take some adjustment and getting used to.
So, I worked on my meal planning over the weekend to hopefully help make that part of this transition as easy as possible. First I wrote out a list of our 21 favorite, and easy, meals for the fall and winter, which wasn’t as difficult to come up with as I thought it might be. And I even have a list of some of our favorite meals that take a little extra effort on my part, that I don’t want to make on a monthly basis, but would make every couple months.
Then, I organized my list by categories – meatless meals, crockpot meals, etc. And now I am in the process of making my monthly meal plan. I’ve decided it will be easiest if I make a theme, of sorts, for each day of the week. I’m planning to get that done in the next few days, definitely by the end of the week. And that will hopefully help to make meals and shopping a little bit easier and less stressful during the week. I’ll share my monthly meal plan with you next week.
Monday – Mac & Cheese (Jer had meeting at church)
Tuesday -dinner with our home group – making bread in the bread machine, and salad
Wednesday – Salsa Chicken and Black Bean Soup in the crockpot
Thursday – Broiled Tilapia Parmesan, veggies and rice
Friday – Cream Cheese Chicken in the Crock Pot over egg noodles
Saturday – Homemade Pizza
Sunday – Brunch
